Microwave sweet potatoes until tender, about 5-7 minutes. Remove and allow to cool. Discard peel and dice sweet potato. Place in a blender with peaches, orange juice, maple syrup, vanilla and pumpkin pie spice.

Fill two glasses halfway full with smoothie. Spoon about half of the yogurt into the center of each smoothie. Pour smoothie on top, leaving about 1” at the top of each glass. Drag a paper straw up and down the edges of the glass to create a decorative look.

Top with remaining yogurt and granola.
